What Does Corporate Catering Include?

Corporate catering can include food preparation, meal packaging, delivery or on-site truck service, standard service supplies, setup, staff, and operational cleanup. It does not automatically include every event need. Guest tables, tents, venue permits, paid parking, security, electrical work, decorations, or extended service may remain the client's responsibility unless they are specifically listed in the quote.

The most important rule is simple: the written quote should identify every inclusion and exclusion.

Food and Menu Planning

A Sauce Culture quote should identify:

  • Menu items

  • Number of meals or portions

  • Meal size

  • Add-ons

  • Vegetarian options

  • Halal chicken information

  • Agreed dietary accommodations

  • Drinks or desserts when included

The quote should not use vague wording such as "lunch for 100" without stating what each guest receives.

Standard menu categories

Sauce Culture can structure corporate menus using:

  • Loaded poutines

  • Pastafarri Penne and Caribbean-inspired pastas

  • Boneless jerk chicken rice bowls

  • Butter chicken rice bowls

  • Caribbean dry rub wings

  • Caribbean hot honey garlic wings

  • Vegetarian options selected for the event

Menu availability may depend on service format and guest count. Poutine is best served differently from a labelled rice-bowl drop-off order, so not every item is ideal for every event.

Packaging and Service Supplies

Standard disposable packaging may include:

  • Meal containers

  • Lids

  • Napkins

  • Cutlery

  • Condiment cups or packets

  • Labels for prearranged special meals

Ask whether the package includes:

  • Compostable serviceware

  • Plates and bowls

  • Serving utensils

  • Trays

  • Chafing equipment

  • Table covers

  • Beverage cups

  • Take-home containers

Do not assume "catering" means china, glassware, linen, or full table service.

Drop-Off Catering Inclusions

A typical drop-off package may include:

  • Prepared food

  • Standard containers or trays

  • Basic labels

  • Delivery to the agreed location

  • A scheduled arrival window

  • Standard napkins and cutlery when listed

  • Drop-off service may not include:

  • On-site food service

  • Buffet attendants

  • Room setup

  • Table rentals

  • Chafing equipment

  • Long-term hot holding

  • Cleanup after employees eat

  • Distribution to multiple floors

The delivery location matters. "Deliver to the office" could mean curbside, lobby, reception, loading bay, or a meeting room. Confirm the exact handoff point.

Food Truck Catering Inclusions

A standard on-site Sauce Culture booking may include:

Reserved truck and kitchen capacity

  • Agreed menu and quantities

  • Local travel for qualifying events

  • Arrival and setup

  • Generator and normal operating equipment

  • Sauce Culture crew

  • Up to two hours of food service

  • Standard meal packaging

  • Operational cleanup

The food truck minimum is generally applied to the event package rather than charged as an unrelated rental fee.

What the Client Usually Provides

Depending on the event, the client may need to provide:

Property permission

The organizer confirms that the property owner or venue allows the truck and catering activity.

A safe operating location

The space should be accessible, level, clear of traffic conflicts, and large enough for the truck, service window, staff, and guest line.

Guest seating and shelter

Sauce Culture serves the food. Tables, chairs, tents, indoor eating areas, and employee comfort arrangements are usually the client's responsibility unless quoted.

Venue access

The client supplies gate codes, security instructions, loading information, parking reservations, and an on-site contact.

Guest communication

Employees need to know when to arrive, what the menu is, how payment works, and whether preselection or vouchers are required.

Guest waste stations

The agreement should identify who provides and empties garbage and recycling containers used by guests.

Travel and Delivery

For qualifying food truck bookings, Sauce Culture includes travel within 20 kilometres of its Surrey base. Beyond the local zone, travel is calculated using the full round-trip distance at $1.50 per kilometre, with a $75 minimum. Drop-off delivery starts at $45.

Possible additional travel-related costs include:

  • Paid parking

  • Ferry charges

  • Toll or access charges

  • Long-distance staff time

  • Overnight requirements

  • Remote-site access

Setup and Cleanup

"Setup and cleanup" should be defined, because it can mean different things.

Sauce Culture operational setup

Positioning the truck

Preparing the service window

Starting required equipment

Arranging service materials

Reviewing the service process

Sauce Culture operational cleanup

Cleaning the truck work area

Securing food and equipment

Managing Sauce Culture production waste

Leaving the assigned operating area in the agreed condition

Venue-wide cleanup

This may include employee tables, dining-room waste, floors, rental equipment, decorations, and garbage removal. Unless the quote includes these services, they are generally handled by the client or venue.

Staffing

Food truck bookings include the Sauce Culture staff required for the quoted service plan. Additional staffing may be needed when:

  • The guest count is very large

  • There are multiple service points

  • Meals must be delivered to departments

  • The event includes buffet attendants

  • The client requests dedicated event support

  • Service extends beyond the standard window

The quote should state whether additional staff are included or billed separately.

Taxes, Gratuity, and Payment

Sauce Culture prices are generally listed before 5 percent GST.

  • A 50 percent deposit and signed agreement reserve the date.

  • The balance is due seven days before the event.

  • Gratuity is excluded and remains optional unless the quote states otherwise.

  • The invoice should identify delivery, travel, service, tax, and other charges separately enough for the client to understand the total.

What Should Be Listed in a Complete Quote?

A strong quote includes:

  • Client and event information

  • Date and location

  • Arrival and service times

  • Menu and quantities

  • Package price

  • Minimum spend

  • Delivery or travel

  • Service duration

  • Supplies

  • Staffing

  • Setup and cleanup scope

  • Deposit and final payment

  • Tax and gratuity

  • Cancellation and rescheduling terms

  • Client responsibilities

  • Sauce Culture responsibilities
